Danish Ebelskiver Iron — Scandinavians love the spherical little
pancakes known as ebleskiver. Countless "traditional" recipes for them exist, but
any old pancake recipe will do, including prepackaged pancake mix and concoctions beginning with cake
mixes. Shape defines ebleskiver, not ingredients, and only an ebleskiver pan delivers.
Safe on gas or electric stovetops, this one is made from heavy cast aluminum so it won't warp. And it's
nonstick, to make flipping the pancakes easy and cleanup a snap. (For authenticity, turn ebleskiver
with a knitting needle.) Its wood handle stays cool and adds a rustic touch. There's a notch on the handle's
end for hanging on a hook or peg. |

Swedish Rosette Timbale Set — Rosettes are deep-fried Swedish cookies
sprinkled with sugar. Timbales are deep-fried Swedish cookies filled with fresh fruit or, in savory form,
with hot creamed chicken, fish, or vegetables. Greeks call their version of these cookies diples: they are
dipped in honey, chopped nuts, and cinnamon. Mexicans sprinkle their deep-fried cookies in sugar, cloves,
and cinnamon. Inventive cooks can change cookie flavorings and vary pastry-shell fillings to create entrees
or pretty appetizers. All of these possibilities (recipes included) come courtesy of this rosette and timbale
set. There are star, floral, and maze molds to make rosettes and fluted heart, square, and round molds for
timbales. Molds screw onto the double-dip handle for frying two at a time. Heat the molds in hot oil, dip
them into a batter, then dip them into the oil again. Cookies or shells easily slip off the cast-aluminum molds. |

Norwegian Krumkake Iron — The Scandinavian version of Italian pizzelle,
krumkakes are light, crisp, cone-shaped cookies served either sprinkled with sugar or filled with whipped
cream. This hinged iron makes them the traditional way. Lay the iron's holder over either a gas or electric
stovetop burner. Preheat the iron in the holder, then spoon a little krumkake batter on the bottom half of
the iron. Close the iron gently and cook briefly, then turn the iron over and cook for a few more seconds.
Finally, remove the cookie and shape it around the wood rolling cone while it's still pliable. This iron
has the solid, practical feel of an Old World tool, before push buttons took away much of the fun and
satisfaction of creating something wonderful with patience and a little skill. |

and check the colour. The tip changes from black to bright red when the cake is done. The sensor
