Confetti Bean Soup
Makes 12 gifts for Modular Mates
(Spaghetti Dispenser or Oval 2 or 3)
MASTER RECIPE
Ingredients
- 6-cups each of 8 different varieties of dried peas, beans and lentils. You may want to use the following:
- black beans,
- small dark red beans,
- split peas,
- pink or shell colored lentils,
- pinto beans,
- light red kidney beans,
- black-eyed peas,
- small navy or white beans

12 beef bouillon cubes

12 bay leaves

Layer ½ cup of each of the peas, beans, and lentils, one after the other in the container. Arrange
the bean/pea layers according to the color scheme that you desire. |

Place the bay leaf and bouillon cube on top of the last layer of beans/peas. |

Seal the container. With a ribbon, attach the following recipe to the container: |

Ingredients
- Bean mixture
- 2 - 4 cloves garlic, crushed
- 3 - 4 ham hocks
- 2 - 4 Tbsp. lemon juice,
- 1 –2 lbs. smoked sausage
- 1 - 2 banana Peppers, ground or crushed
- 1 - 2 large onions, chopped
- salt & pepper to taste,
- 2 cans of peeled, chopped tomatoes in juice
- Water
Set aside bay leaf and bouillon cube. Rinse and drain bean mixture: cover overnight. Cook in water
with ham hocks and onion about 3 hours or until tender. Do not boil hard. Remove meat from hocks and
add other ingredients. Simmer 30 to 60 minutes. Add more water when necessary. Serve as soup or over
white rice.
Note: This hearty recipe makes a big batch so you may want to freeze half of it in a
Tupperware Rock 'N Serve Large Deep Container for a cold Winter day! |
