Zesty Chicken Caesar Salad

Makes 4 servings.

Ingredients

  • 3 large skinless, boneless chicken breasts (cut into ½-inch-wide strips)

  • 2 Tbsp. Simple Indulgence Italian Herb Seasoning Blend

  • 6 oz. Romaine lettuce leaves (torn into pieces; 4 cups)

  • 6 oz. tomatoes (cut into wedges; 1 large)

  • 4 oz. red onions (cut into thin rings; ½ cup)

  • 1 oz. fat-free croutons (about 1 cup)

  • 4 Tbsp. fat-free Caesar salad dressing

1. Heat oven to 400°F. Cut chicken into strips; place on Tupperware Silicone Wonder Mat on large baking pan. Sprinkle with Italian Herb Seasoning Blend. Bake until strips are no longer pink and juices run clear, about 15 minutes.
2. Meanwhile, wash lettuce in Tupperware Double Colander; drain. Place lettuce, tomato, onion and cooked chicken in large mixing bowl, tossing gently.
3. Divide mixture in four Tupperware Microwave Cereal Bowls. Snap on seals and refrigerate up to 1 day, or serve immediately. Place 1 Tbsp. of salad dressing in each of 4 Tupperware Midgets Containers with seals; serve with each salad. Drizzle with salad dressing and top with croutons just before eating.
