The Sandwich Buffet — Jeff Smith explores sandwich recipes from around the world, including some American classics. Recipes include: pocket bread sandwiches, Chinese pancake sandwiches, tortilla sandwiches, Norwegian lefse sandwiches, the Danish open-face, French croque monsieur, oyster loaf from new orleans, muffaletta from New Orleans, Philadelphia steak sandwich, and six-foot long buffet sandwich.

Sauces — Greek tomato sauce, okra in Greek tomato sauce, egg lemon sauce, Italian tomato sauce, basic brown sauce, sauce Bolognese, green sauce for boiled meats and Chinese dip sauces are demonstrated by Jeff Smith.

Sauces from Wine — A frugal way to prepare a fine sauce is to deglaze the cooking pan with a bit of wine. It adds flavor without undue calories and salt. Recipes include: basic brown sauce, demi-glace, glace de viande, Marsala and mushroom sauce, white butter sauce, and tomato and garlic sauce.

Seafood and Wine — Seafood and wine support each other beautifully at the table. Jeff prepares various seafood dishes and suggest wines to accompany them. Recipes include: salmon with green sauce, prawns sautéed with garlic and wine, fried fish New Orleans, oysters in stolen sauce, and squid in mustard ginger sauce.

Shakers — Actual Shaker recipes: baked bean soup, Shaker fresh herb soup, Shaker daily loaf, oyster and ham pie and stuffed onions.

Sherbets and Ice Creams — Jeff Smith creates an all-dessert buffet and includes a trip to the peacock ice cream factory in Chicago. Recipes include: lemon ice champagne, peach sherbet, raspberry ice, watermelon ice, and ginger ice cream.

Soul Food — Recipes include chitterlings, fried chitterlings, collard greens, fried okra, black-eyed peas and ham hocks, chicken-fried pork chops, seasoning salt and pork neck bones and sauerkraut.

Soups  — Soup's on: Chinese chicken soup stock, Bean curd soup, peas & egg soup, seaweed soup, double boiled soup, triple soup with egg lemon sauce, Roman "rag" soup.

Southern Cookin' — Here we go: pickled peaches, Hoppin' John, southern ham, pecan pie, dweet potato douffle, chicken Brunswick stew.

Southwest Indians — Amazing recipes: carne adovado, blended red chile pods, beans with chicos and pork, green chile stew with pork and pesole with pork.

The Spanish Kitchen — Spicy Spanish cuisine: cold tomato soup, garlic and egg soup, chicken and chick-pea stew and paella.

The Stand-Up Buffet — Jeff Smith explains the different types of food served at a stand-up buffet versus a sit-down one. Recipes include: lamb curry, curry powder, green bean and filbert salad, and zucchini, rolled and marinated.
